We are going on holidays. Don’t get me wrong. I LOVE, LOVE, LOVE holidays, and cannot wait to go, but not meal planning sometimes does make me anxious. I like to know what I need to do, how much I need to spend, what I have on hand. We are going on hols, but the oldest of my ready made sons has to stay home unfortunately – adults have responsibilities, and he can’t get time off work!
Monday – Quiche Lorraine served with Garden Salad **
Tuesday – Left Overs *Anything we need to get rid of before we leave will go in – sometimes this is as simple as eating exactly the same meal as previous nights, and sometimes it means incorporating a few things into a new dish or making a tasting plate of a few different things*
I’m going to do some freezer cooking so that I can be slightly reassured Caine won’t just survive on packet noodles of Mi Goreng for the next week while we are away.
** Some things that I make whilst we are still at home will be doubled and I will freeze the second batch
A few of my faves are:
- Beef Stroganoff
- Pasta Bake (chicken, tuna, vegetable, chicken and mushroom, there are a bunch of combinations that taste great)
- Teriyaki Chicken with Fried Rice
- Garlic Beef Stir Fry
- Quiche Lorraine
Lunch Box Treats:
- Chocolate Chip Cookies – I often make the 5 ingredient cookies (the popular recipe that makes about 100 cookies), but this recipe makes MY favourite texture of cookies – Crumbly and moist on the inside! Click on over next Monday for Love Thy Lunchbox where I will share the recipe
- Mini Choc Chip Banana Bread Loaves – banana bread recipe, gently mix through chocolate chips and pour into an awesome silicone mini loaf tray from Kmart for just $5! Result? Cutest little loaves you ever did see (oh, and they taste great too!).
